1 kg (about 2 pounds) fresh mussels, cleaned and debearded
1-2 green chilies, sliced
1 bell pepper, sliced
A handful of chili leaves (optional)
Ground pepper, to taste
1-2 tablespoons fish sauce
A small amount of umami seasoning (optional)
Step-by-Step Instructions:
Step 1: Prepare the Ingredients
Start by cleaning the mussels under cold running water. Scrub the shells with a brush to remove any debris and remove the beards. Set them aside.

Step 2: Heat the Butter
In a large frying pan, heat 3 tablespoons of butter over medium heat until melted and bubbly. This will create a rich base for our dish.

Step 3: Add Garlic and Ginger
Add the minced garlic to the pan and stir for about 30 seconds until fragrant. Next, add the grated ginger and stir for another 30 seconds to release its aromatic flavors.

Step 4: Sauté the Onions
Add the sliced onions to the pan and stir frequently for about 2 minutes until they become translucent and soft, absorbing the flavors of the garlic and ginger.

Step 5: Incorporate the Tomatoes
Add the sliced tomatoes to the mixture and stir well, allowing them to cook down for about 2 minutes. This will create a flavorful sauce that complements the mussels perfectly.

Step 6: Add the Mussels
