Old Fashioned Ricotta Cake

Ingredients:

*For the Pie Crust:*
125 g (about 1/2 cup) soft butter
125 g (about 1/2 cup) granulated sugar
3 egg yolks
Zest of half a lemon
1 tsp vanilla essence
300 g (about 2 1/2 cups) all-purpose flour
1 tsp baking powder

*For the Filling:*
500 g (about 2 cups) ricotta cheese
75 g (about 1/3 cup) granulated sugar
3 egg whites
Zest of half a lemon
50 g (about 1/4 cup) candied orange peels

Instructions:

1. Preheat your oven to 180°C (350°F).

2. *Prepare the Pie Crust:*
In a mixing bowl, cream together the soft butter and granulated sugar until light and fluffy.
Add the egg yolks one at a time, beating well after each addition.
Mix in the lemon zest and vanilla essence.
Gradually add the flour and baking powder, mixing until well combined.
The batter should be smooth and cohesive.

3. *Prepare the Filling:*
In a separate bowl, combine the ricotta cheese, granulated sugar, and lemon zest. Mix well.
Beat the egg whites until stiff peaks form, and then gently fold them into the ricotta mixture.
Add the candied orange peels and mix until evenly distributed.

4. *Assemble the Pie:*
Grease and flour a pie pan
Spread half of the cake batter evenly in the pan.
Spoon the ricotta filling over the pie crust.
Top with the remaining pie crust and crimp the edges

5. *Bake:*
Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.

6. *Serve:*
Dust the cooled cake with powdered sugar if desired.
