To make Chef Max Mariola saltimbocca I chose high quality, fresh and tender veal, which I delicately wrap with a slice of raw Parma ham, fixing everything with a sage leaf, without even needing a toothpick.
Once in the pan, this combination becomes a symphony of flavours, with the meat golden on the outside and juicy on the inside, which blends perfectly with the ham, releasing an irresistible aroma.

In this version of traditional Roman saltimbocca, I wanted to add a special touch: browned asparagus as a side dish. These not only add a pleasant contrast of colors to the dish, but their slightly sweet and earthy flavor creates a perfect combination with the flavor of saltimbocca.
