I am back with Chef Celso from Urban l'Assassineria Urbana in Bari, Italy to talk Spaghetti all’Assassina. In this recipe, pasta doesn’t cook in water but directly in the sauce and in the oil, giving it a distinct crunch and texture that completely breaks away from all pasta rules. Today we’re going to take a look at different variations of the dish: Assassina with a turnip top sauce, San Giuannidd (anchovy pesto, caramelized tomatoes and “pop capers”), and Assassina 2.0 (with stracciatella, the inside of the burrata).
