This creamy, moist and delicious corn casserole is the perfect comfort food and side dish for all family dinners! The cooked peppers and onions make all the difference!

Ingredients Used

1 8.5oz pk of corn muffin/cornbread mix
1/2 cup or 1 stick of butter @room temp
8oz cream cheese @ room temp
2 eggs @ room temp
1/2 yellow onion
1 can cream style corn
1 can whole kernel corn (drained)
3/4 to 1 cup diced assorted peppers
1 tsp pure vanilla extract
1-2 cups of shredded cheddar/ Colby Jack cheese

Directions: sauté the onions and peppers in the melted butter first for about 5-6 minutes total. Allow it to cook down completely! Mix the other Ingredients and add the cooked peppers and butter. Pour into a hot casserole dish and top it off with the cheese! Bake immediately @ 350F for 40-45 minutes.

Allow to rest for at least 15 minutes, serve and enjoy!
