Today let's make easy CABBAGE THORAN | STIR FRIED CABBAGE & DRY PRAWN. First of all, cabbage is inexpensive and wonderfully versatile, low calories yet loaded with vitamins and minerals: folate, vitamin C & K, calcium, potassium and magnesium, also packed with digestion- boosting fiber and anti-oxidants.
 
Cabbage Thoran is the heart of Kerala Cuisine. Any Kerala sadhya is incomplete without cabbage thoran. Cabbage thoran is a stir fry made using shredded cabbage and grated coconut. It is simple, easy and tasty even with less ingredients. You can prepare the thoran using cabbage, or a combination of cabbage and carrot or cabbage and dry prawns, or even cabbage, carrot and capsicum.
 
There are so many different ways to prepare a thoran. Some use onions while others use shallots. Some add garlic and ginger, while others like it plain. It is delicious and perfect combination as a side dish for rice. This yummy non vegan cabbage thoran is mildly spiced and brightly colored, this stir-fry retains the delicate taste of cabbage and dry prawn without drowning it in a host of spices and strong flavors.

INGREDIENTS:
Dry prawn: 1/4 cup
Shredded Cabbage: 1/2 of a medium sized cabbage
Carrot: 1/2 cup chopped
Grated coconut: 1 cup
Onion: 1 thinly sliced
Ginger: 1 tsp chopped
Green chili: 3 chopped
Chili flakes: 1 tsp
Turmeric powder: 1/2 tsp
Curry leaves: 2 spring
Mustard seeds: 1 tsp
Oil: 2 tbsp
Salt: to taste

INSTRUCTIONS/DIRECTIONS:
How to shred the cabbage:
First, remove any damaged or browned outer leaves of cabbage and give the head a thorough rinsing under cold water. Cut it into half, now you need to remove the triangular core since it's full of water and it makes the thoran soggy. To do this, cut into the core at an angle where the stem meets the leaves of the cabbage, and remove it from each half. Then thin slice the cabbage using a chef's knife.
 
Prepare cabbage stir fry:
1. Heat 1 tbsp oil in a pan, add washed dry prawns and 1 tsp- chili flakes, then dry fry the prawns stirring constantly and set aside for later use.
2. In the same pan, heat 1 tbsp- oil on medium-high heat until shimmering, reduce the heat to medium and splutter mustard seeds, then add ginger, green chili and curry leaves and cook, stirring frequently, until fragrant about 1 minute.
3. Add onions and salt to taste, cook stirring constantly, until translucent, about 3 minutes. Then add the gated coconut and turmeric powder, mix well for a minute or two.
4. Add the shredded cabbage and carrot, mix well/stir fry until just starting to wilt, about 5 minutes.
5. Now add the dry prawn, cover and cook for 5 minutes, let the cabbage cook, then lid off, stir fry couple of minutes more to remove any excess moisture. Adjust the salt as needed and serve hot with rice.

RECIPE NOTES:
6. DO NOT add water while cooking cabbage thoran, so that the cabbage is crunchy and not soggy.
7. Make sure to cut out triangular stem core.
8. Adjust the number of green chilies depending on your spice level.
