COACH SHANNON’S ANTI-INFLAMMATORY ~HOMEMADE MAYO ~

Ingredients:

2 eggs (At room temperature. Set them on the counter 1 hour before making this recipe or put in hot/warm water for 5 minutes prior to making this recipe!)
Juice from ½ of a lemon
½ teaspoon of salt
1 teaspoon of Dijon mustard
1 heaping donk (1/32 of a teaspoon) of pure stevia or just a touch of sweetness of you choice!

** The key is to have all of the ingredients at ROOM TEMPATURE to allow everything to emulsify together well!!

To make using a hand-held immersion blender, as shown in the video:
1. Crack the eggs into a pint jar, blend the eggs together until slightly frothy.
2. Add your lemon juice, salt and Dijon mustard. Blend well until slightly frothy.
3. SLOWLY DRIZZLE in your oil. You may find that you add slightly more or less oil than the recipe calls for, depending on the desired thickness. As you add more oil, you might find it helpful to pump your immersion blender up and down a few times to make the mayo even fluffier!
4. Refrigerate and ENJOY!!!
** To make using a blender, simply follow the same steps as above and then transfer into a jar at the end!
