This famous "Capitan-Cookies" caramel cake melts in your mouth! Shortcrust pastry cake! Super delicious!!
This cake is very noble in taste! Very fine and aromatic! And the cake looks amazing too! Everyone will be thrilled!

INGREDIENTS for caramel:
200 g of sugar
180 ml of cream (30%)
A pinch of salt
100 g butter
the baking dish is 24 cm
INGREDIENTS for the shortcrust pastry:
460 g flour
150 g cold butter
8 g baking powder
16 g vanilla sugar
200 g of sugar
1 Pinch of salt
2 Eggs (Gr. M)
200 g cold cream cheese
100 g chocolate droplets (dark chocolate)
I bake each cake base in a preheated oven at 220 °C (440°F) WITH recirculated air!!! ( with convection) on medium rail about 8-10 minutes
a little flour to sprinkle
INGREDIENTS for the cream:
400 ml cold whipped cream (min. 30% Fat),
16 g vanilla sugar
300 g cold cream cheese
250 g cold mascarpone
half of the total amount of caramel (room temperature)
INGREDIENTS for the chocolate cream (ganache):
200 ml hot whipped cream
200 g milk chocolate
50 g white chocolate
170 g peanut cream (peanut paste)
100 g of peanuts (roasted and salted) for the filling
INGREDIENTS for the chocolate glaze:
100 g of chocolate
2 tbsp odorless vegetable oil
100 g peanuts (roasted and salted) for decoration
