Shrimp about 20 small to medium pieces
Sausage 1 link each of kielbasa and andouille
Bay Leaves 4-6
Fresh Thyme 8-12 sprigs
Celery 1.5 cups diced
Parsley 1 bunch chopped
Fresh Okra about 20 pieces sliced
Green Onions 4-8 stalks chopped
Red Bell Pepper 2 cups diced
Onions 2 cups diced
Garlic 8-12 cloves finely chopped
For Roux:
Bacon Fat 1.25 cups
AP Flour 1.875 cups
Chicken Stock 2-2.5 quarts
Spices and seasonings: See video for amounts
Salt and pepper to taste
NO Salt Creole seasoning to taste
Full salt Creole Seasoning to taste
Lemon pepper for rice
Gumbo File (pronounced fee-lay)
Rice Jasmine or whatever kind you prefer
