Each year we cannot wait to harvest the first Zucchini. By the middle of the season we are giving away Zucchini to just try to stay ahead of the crop. Zucchini Flour is another way for us to utilize our harvest. It cannot replace all the flour in a recipe but it can be used for as much as half of the flour in muffins and baked goods. This is the first year we have tried this and so far we are pleased with the results.
