If you are familiar with the sandwich scene in Italy, you know that you can’t get away with a simple ham and cheese. And especially in the south of Italy, a new ingredient has become a staple in sandwiches: raw seafood. Raw seafood is not a new ingredient here: it’s deeply rooted in tradition. Especially seafood like squid and prawns which are very local to this area, unlike the more common tuna or salmon that you may find abroad. I visited Crudammare, a local shop, to see how raw seafood is paired in sandwiches.
