🌟 Ingredients:

Malabar Spinach (Bachali Kura) – 2 bunches
Dried Red Chilies – 10-12
Fenugreek Seeds – 1/2 tsp
Tamarind – 15-20 grams
Turmeric Powder – 1/2 tsp
Salt – to taste
Garlic Cloves – 7-8
Oil – for frying and tempering
Bengal Gram – 1 tsp
Black Gram – 1 tsp
Mustard Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp
Curry Leaves – 2 sprigs

📝 Summary:

1. Wash and chop 2 bunches of Malabar Spinach.
2. Heat 1 tsp oil in a pan and add 10-12 dried red chilies. Fry until they change color.
3. Add 1/2 tsp fenugreek seeds and fry for a minute before transferring the mixture to a plate.
4. In the same pan, heat 1/2 tsp oil and add the chopped Malabar Spinach. Don’t add any water.
5. Add 15-20 grams of tamarind and 1/2 tsp turmeric powder. Cook on low flame until the spinach softens.
6. Turn off the stove and grind the fried chili mixture in a hand grinder along with salt to taste and 7-8 garlic cloves.
7. Add the cooked spinach and grind it into a coarse paste.
8. Prepare the tempering: Heat 2 tbsp oil in a pan, add 1 tsp Bengal gram, 1 tsp black gram, 1/2 tsp mustard seeds, and 1/2 tsp cumin seeds. As they start to change color, add 2 dried chilies and 2 sprigs of curry leaves.
9. Add the prepared pachadi to the tempering and mix well.
10. Turn off the stove and serve.
