All about coconut flour! What it is, how to use and three of my favorite coconut flour recipes including pancakes, banana bread and cookies.

Coconut flour is high in protein and fiber. It's also gluten-free, nut-free and low carb. It makes a great sub for all-purpose flour, but you can't use it as a direct substitute because it's super absorbent. I have three awesome baking recipes to share with you. One for breakfast, a snack and dessert. Try all three!!


Coconut Flour Pancakes:

● 1/4 cup coconut flour
● 1 teaspoon baking powder
● 2–3 eggs (most people prefer 2 eggs!)
● 1/4 cup almond milk + 1/2 – 1 Tablespoon more if needed
● 1 Tablespoon maple syrup*
● 1/2 teaspoon vanilla
● non-stick spray

Coconut Flour Banana Bread:
● 1 cup mashed banana*
● 3 eggs
● ½ cup almond butter
● ¼ cup coconut oil, melted
● 1 teaspoon vanilla
● ½ cup (60 grams) coconut flour
● ½ teaspoon baking powder
● ½ teaspoon baking soda
● ¼ teaspoon sea salt
● ½ cup dairy-free mini chocolate chips

Coconut Flour Cookies:
● ½ cup (60 grams) coconut flour
● 1/4 cup coconut oil, melted
● 1/4 cup honey
● 2 eggs
● 1/4 teaspoon vanilla extract
● 1/4 teaspoon sea salt
● 1/4 teaspoon baking soda
● 1/3 cup chocolate chips (optional)
