Easy Chicken Wings & Roasted Veggies Recipe

Ingredients:

1 kg chicken wings
2 bay leaves
1 tbsp table salt (for boiling)
10 peppercorns
3 carrots, cut into chunks
0.5kg potatoes, cut into even sizes (skin on)
1 tsp table salt (for seasoning)
½ tsp black pepper
1 tsp sweet paprika
3-4 garlic cloves, crushed
2 sprigs rosemary
2 tbsp oil

Instructions:

Prepare Chicken & Boil
Place chicken wings in a pot with 2 bay leaves, 1 tablespoon of salt, and 10 peppercorns. Add enough water to cover the chicken.
Bring to a simmer and cook for 10 minutes.

Prepare Vegetables
While the chicken simmers, cut carrots and potatoes into chunks. Leave the potato skins on for added texture.

Add Vegetables to Pot
After the chicken has simmered for 10 minutes, add the carrots and potatoes to the pot. Simmer everything together for another 10 minutes.

Drain and Save Broth
Once cooked halfway, remove the chicken and vegetables from the pot. Reserve the broth for soups or other recipes.

Season
In a bowl, mix 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon sweet paprika, crushed garlic, rosemary sprigs, and 2 tablespoons oil.

Roast in Oven
Preheat the oven to 200°C (390°F).
Toss the chicken and vegetables in the seasoning mix and spread them on a baking tray. Roast for 20-25 minutes until golden.

Serve and Enjoy
Once golden brown, remove from the oven and serve!
