狗棍魚豆腐湯

材料：
狗棍魚1斤
豆腐1磚
薑1舊

處理：
1. 魚，打鱗，除去內臟。
2. 魚，清水洗乾淨，擎乾水。
3. 薑，連皮洗乾淨，1開2 ，拍鬆。

烹調：
1. 大火在鑊中燒熱油1湯匙。
2. 爆香薑，轉中火。
3. 轉大火，放魚落鑊煎香。
4. 魚開始轉金黃色，保持大火，加入大滾水2升，冚蓋，轉中火，滾15分鐘。
5. 豆腐，切好，放入煲內。
6. 魚湯已滾好，用隔篩過濾好魚湯。
7. 大火煲滾魚湯。
8. 完成，可享用。

Tofu soup with lizard fish

Ingredients:
Lizard fish 1 catty
Tofu 1 cube
Ginger 1 No.

Preparation:
1. Fish, get it scaled, remove its intestines.
2. Fish, rinse with tap water. Hang dry.
3. Ginger, rinse its skin, divide the ginger into 2 shares. Beat well.

Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Fry ginger well. Turn to medium flame.
3. Turn to high flame, fry the fish well.
4. Fish starts to turn in color of golden yellow. Keep at high flame
5. Fish starts to change into golden yellow, keep at high flame, pour boiled~up water 2L into wok. Cover it up. Turn to medium flame and cook for 15 minutes.
6. Tofu, has been cut well, put in pot.
7. Fish soup has been cooked well. Filter the soup properly.
8. Heat up the fish soup at high flame.
9. Complete. Serve.
