This is my go-to recipe for an easy and delicious homemade banana bread, that I've made healthier by opting for a few simple ingredient choices that are both nutritious and nourishing.

With a super moist texture and an irresistible flavour, this is a classic go-to recipe of mine when I'm in the mood to bake something easy and comforting that my family and friends all love. It's great because you can enjoy this any time of the day - whether as a quick nourishing breakfast, a mid-day snack, or as a healthy dessert. And as a bonus - it's also a perfect way to use up those overripe bananas just sitting on your kitchen counter!

DIRECTIONS:
► STEP 1: Prep and combine dry ingredients in a large mixing bowl.
► STEP 2: Add wet ingredients into bowl with dry ingredients, then stir into a smooth batter.
► STEP 3: Add in mix-ins, and stir to fold the ingredients in.
► STEP 4: Grease a loaf pan (9x5) with cooking spray, and line with a sheet of parchment paper for easy removal.
► STEP 5: Pour batter into greased loaf pan. Sprinkle extra chopped walnuts and chocolate chips on top of batter.
► STEP 6: Bake in oven at 350F / 177C for 50-55 mins. All ovens are different, so cooking times may vary.
► STEP 7: Pierce the center with a toothpick to check for doneness. If it comes out clean it's ready, otherwise bake for an extra 5-10 minutes.
► STEP 8: Remove bread from loaf pan, and let it cool down for 10-15 minutes. Enjoy!

STORAGE:
► Refrigerate in an air-tight container for up to 1 week, or freeze for up to 3 months.
► Thaw and reheat in microwave or oven/air fryer.

INGREDIENTS:
(serves 8 slices - 314 calories per slice)

DRY INGREDIENTS:
► Oat flour (1.5 cups / 180 g)
► Baking powder (1 tsp / 4 g)
► Baking soda (1 tsp / 4 g)
► Ground cinnamon (1 tsp / 2 g)
► Salt (1/4 tsp / 1.5 g)

WET INGREDIENTS:
► 4 over-ripened bananas - should yield roughly 1.5 cups mashed (300g / 11 oz)
► Coconut oil (1/4 cup / 59 ml)
► Honey (1/3 cup / 113 g)
► 2 large eggs - whisked
► Greek yogurt (1/4 cup / 50 g)
► Vanilla extract (1 tsp / 5 ml)

MIX-INS:
► Chopped walnuts (1/4 cup / 29 g)
► Chocolate chips (1/3 cup / 60 g)
*Or you can use raisins, or any other kind of nuts
