"Komugi girl" is a bread and baked goods shop that opened in Osaki, Tokyo in November 2023.
Owner and former Italian chef, Chef Yokohata Daichi, uses more than 10 different types of flour to make bread and baked goods. The flour used includes "Kitano Kaori", whole wheat flour from Hokkaido, "Sumurela T70" and "Yumechikara", stone-ground "Mizuho Chikara", rice flour from Kumamoto Prefecture, "Spelt" from Germany, "Mould de Pierre", a blend of French and North American flours, "Avalon", high-quality wheat from Canada, and "Grist Mill", stone-ground flour from Canada.
