This one is so easy, filling and most everyone enjoys it!

1 pkg (2 lb bag) southern style potatoes
1 cup sour cream
1 can cheddar cheese soup
1/2 tablespoon garlic powder
1/2 tablespoon paprika
1 package sausage, cut up
3 cups shredded cheese (I use cheddar, but feel free to get creative)
additional 1/2 cup to 1 cup of cheese for topping.

Mix all well in a bowl and then pour into a 9X13 casserole dish. Cover with foil and back in a preheated 350 degree oven for an hour and 15 mins. Remove foil, sprinkle on an additional 1/2 cup to a full cup of cheese and bake for about 10 mins more, or until cheese is nice and gooey.. yes gooey is a technical term. Enjoy!
