I don’t know how comfort food became defined by fried chicken, chocolate cake, mac and cheese, lasagna, and meatloaf. I love all of those foods, but I find comfort in the act of making food, not just consuming it. When I am [insert emotion here] and want to indulge that feeling or transform it, I cook simple foods that reward bigly, that remind me of caring for another or being cared for by someone who loves me. This little pot of beans and greens is Carla taking care of Carla, and finding the comfort in that.

Personal Pot of Beans and Greens
¼ cup dried beans, such as Calypso or cannelini
¼ cup extra-virgin olive oil
3 cloves garlic, smashed
½ yellow onion, thinly sliced
Kosher salt; freshly ground pepper
4 anchovy fillets
1 teaspoon Aleppo
1 teaspoon whole coriander, lightly crushed
1 teaspoon whole fennel, lightly crushed
½ teaspoon turmeric
Parm rind
A big handful of escarole, very roughly chopped (about 5 cups)
