Chicken and Dumplings
Ingredients for 4 generous servings
1/2 cup butter (113g)
3 celery stalks, thinly sliced
1 onion, diced
3 medium carrots, diced
1 teaspoons salt, and black pepper to taste
1/2 cup flour (for thickening)
4 cups unsalted chicken stock
1 teaspoon dried thyme leaves
A dash of garlic powder (or to taste)
The juice of half a lemon
1/3 cup chopped fresh parsley
4 cups (about 450g) cooked chicken meat, cubed or shredded
2 cups Bisquick Baking Mix (available globally on Amazon)
2/3 cup milk
