500 g of chicken breast,
3 cups of water or chicken stock,
1 onion or light green part of leek,
2 cloves of garlic,
200 g od button mushrooms,
1 small red bell pepper or 1/2 of a large one,
approx. 1/3 cup heavy cream,
1 tsp of potato starch or corn starch (or flour),
seasonings to taste: salt, pepper, favourite poultry seasoning

some parsley, optional

Cut chicken breasts into few thin cutlets and sprinkle with seasonings. Heat a small amount of oil ina pan, add the meat and sear, until deeply golden on both side (but still raw inside). set aside.
To the same pan, add sliced mushrooms and finely chopped onion or leek. Cook for few minutes, until lightly golden.Add finely chopped garlic, cook for 30 seconds and add the meat back in. Cover with stock or water. Simmer for about 15 minutes or until tender. Add some cream. Season well. Thicken the sauce with some slurry (starch with 1/3 cup of water or milk). Add corn. Sprinkle with parsley. Serve over potatoes, pasta, rice or barley and some crunchy slaw on the side. Enjoy!
