いまや外苑前を代表する焼き鳥店「いろ鳥」。

「鳥よし 銀座」で6年修業し、地元さいたま市にて10年間「鳥せい」を営む。
40歳を目前に、東京で勝負すべく、2020年3月に「いろ鳥」をオープン。

現在は紹介制で、さらに基本は一回転のみとなっている。

なんと言ってもこの店の最大の特徴は炭と電気の「ハイブリッド焼き」である。

電気でふっくらと焼きあげ、仕上げに炭火で薫香をつける。かつてないほど非常に繊細な火入れを楽しむことができる。

今回は私の原点(いろ鳥)の店にで、焼鳥達人の会の青木会長と共に、色々と振り返る回。

IRODORI” is now a representative yakitori restaurant in Gaienmae.

After training at Toriyoshi Ginza for 6 years, he ran Torisei in his hometown of Saitama City for 10 years.
Before turning 40, he opened “IRODORI” in March 2020 to compete in Tokyo.

Currently, the restaurant only accepts referrals, and the basic policy is to have only one turn.

The restaurant's most distinctive feature is its “hybrid grill,” which uses charcoal and electricity.

The meat is grilled to a fluffy perfection using electricity, and then finished off with a charcoal grill to add aroma. The most delicate cooking process has never been seen before.
