Fast Pickled Cucumbers | How to Make Chinese Pickled Cucumbers | Pickled Cucumbers with Soy Sauce

Hello everyone, Today I show how to cook Pickled Cucumbers easily and quickly. Soy Sauce Cucumbers Pickled tastes sour and slightly spicy.
A simple yet delicious way of serving cucumbers to accompany any meal! Pickled with ginger and chili for an extra kick.

Ingredients:
4-5 cucumbers
2 tsp, Salt (for marinating)
3-5 slices Gingers
3-4 cloves Garlic
2-3 Fresh Chili
2-5 Dry Chili
4 tbsp, Soy Sauce
1/4 cup, Vinegar
2 tbsp, Sugar
1 tsp, Peppercorns


Method:
1. Cut off the stem and root ends of the cucumber.
2. Remove the seeds by slice the cucumber into medium spears.
3. Cut off each spears into smaller spears.
4. Transfer them to a mixing bowl.
5. Sprinkle the salt.
6. Gently Massage the cucumbers.
7. Allow the cucumbers to sit for 5-10 minutes.
8. Make a quick pickling liquid. Add the soy sauce, vinegar, sugar, peppercorns into a mixing bowl.
9. Stir in the sugar until they're dissolved.
9. Scoop out the marinated cucumbers to a mixing bowl.
10. Add ginger, garlic, fresh and dried chili.
11. Pour this pickling liquid over the cucumbers.
12. Massage to combine well.
13. Transfer the cucumber spears into the jar.
14. Pour the remaining pickling liquid over the cucumber in the jar.
Submerge them completely.
15. Allow the slices to sit at room temperature for 30 minutes or overnight.
16. Store in the fridge for up to 10-12 days.
