Merry Christmas!

My final Christmas recipe for 2014... Thanks to all the family for these family recipes

Apricot Balls
1 Cup of desiccated coconut
1 Cup of chopped dried apricots
1 Cup of crushed cornflakes
1 Cup of chopped mixed nuts (Macadamias and Almonds works well)
1 Can of condensed milk
1 Tblspn of Golden Syrup

Carefully heat condensed milk and Syrup, allowing it to caramelise a little, don't let it catch and keep the heat gentle. If you only manage to heat the liquids and take off the stove, this will be fine. The heating and cooling process thickens the liquid somewhat.

Combine all the dry ingredients in a bowl. When the liquid has cooled a little, add it to the dry mix. Mix well

Do not mix with hands until the mixture is cooler.

Roll into small balls, and refrigerate.

Keeps for about a week. Delicious.
Its nice to soak the fruit in some alcohol for Christmas

Honey Crackle

5 Cups of cornflakes
1Tblspn of Honey
3oz sugar
2oz of butter

Heat the sugar, butter, honey a little. You could even microwave. I like to make a syrup in a saucepan. Let it bubble for about a minute no more. Add to the cornflakes and mix well.

Bake in patty pans for about 5 minutes in an oven pre heated to 140. Its better to under cook than over cook these.

Tip. When they have cooled and set, you can steam the paper pan away CAREFULLY from kettle steam and enjoy.
