西堀酒造は、明治5年（1872年）に創業された酒蔵で、栃木県小山市に位置しています。国登録有形文化財に指定された酒蔵で、日光連山から関東平野に注がれる天然伏流水を仕込み水として酒造りを行っています。
栃木の地産地消の地酒「門外不出」ブランドをはじめ、特許取得済の日本初の”透明タンク醸造”酒「CLEAR BREW」や、古代米の純米酒「愛米魅（あいまいみー）」を造っています。また、酒蔵見学や定期的な蔵開きイベントも開催しており、伝統を継承しつつ挑戦を忘れず、「記憶に残る酒」を提供することを目指しています。
直近の受賞歴としては、2017年にワイングラスでおいしい日本酒アワードで「最高金賞」「金賞」をダブル受賞し、2018年にはIWC 2018でCommended（大会推奨賞）を受賞しました。さらに、2019年には第100回南部杜氏自醸清酒鑑評会で優等賞を受賞し、全国新酒鑑評会でも金賞を受賞しました。

It's Japanese sake. Nishibori Sake Brewery is a sake brewery founded in 1872 and located in Oyama City, Tochigi Prefecture. This sake brewery has been designated as a nationally registered tangible cultural property, and brews sake using natural underground water that flows from the Nikko Mountains to the Kanto Plain.

In addition to Tochigi's locally produced and locally consumed local sake brand ``Kutai Fude'', Japan's first patented ``transparent tank brewed'' sake ``CLEAR BREW'', and pure rice sake made from ancient rice ``Fugami Mi''. is being built.
