Coconut dosa is a delicious and flavorful South Indian dish made with coconut, rice, and spices. Here's a simple recipe to make coconut dosa:

Ingredients:

3 cups rice
2 cups grated coconut
1/2 teaspoon methi seeds (fenugreek seeds)
1/4 teaspoon salt
1/2 cup Urad Dal
Ghee or oil for greasing
Chutney or sambar for serving

Instructions:

1. Soak rice, urad dal, methi seeds for 8 to 10 hours. Drain and grind into a fine paste.
2. Grind grated coconut and add it to the batter and ferment for 8 to 10 hours
3. Heat a non-stick pan or dosa tava over medium heat.
4. Pour a ladle of the batter and spread evenly
5. Cook until the edges start to curl and the surface is dry.
6. Flip and cook the other side.
7. Serve hot with chutney or sambar.
