I made a potato pancake for a rainy day lunch. This recipe is crispy on the outside, soft on the inside, and has a sweet potato flavor.

Ingredients (for 4-6 people)

6-8 potatoes

Shimeji mushrooms 1 pack
Shiitake mushrooms 3 pieces
Pizza cheese - as much as you like!
Bacon block 70g (as much as you like!)
Olive oil (also salad oil or butter)
3-4 tbsp
Salt and pepper (appropriate amount)

*When making for 2 people
If the amount of potatoes is small, it will be difficult to make them unless you use fewer ingredients.
I think it's best to choose ingredients that are well seasoned or have a strong flavor.
