Thank you all so much for the love and support for my first vlog!
Here is Vlog #2 and I hope you enjoy. In this video I share some cooking with my mom (crockpot chili and homemade granola!) as well as our adventures eating out in the city. I also give you a glimpse into my days balancing work and life, busy days in the OR, and more.

Recipe for crockpot chili:
(really this isn't a recipe, but it's everything we put in the crockpot)
1 medium white or yellow onion, 2-3 stalks of celery, 3 large carrots- all finely chopped. 2-3 cans of beans (we used chili beans- pinto, black, and kidney). 2 cans of diced tomatoes, 2 cans of tomato sauce. 1 packet of chili seasoning plus extra chili powder, garlic powder, cayenne pepper, salt and pepper to taste. Cook everything on high for 4 hours or until veggies are soft.

Granola:
6 cups of plain oats
1 cup of oil of your choosing (we combined grapeseed oil, coconut oil, and a little melted butter... the butter makes it delicious!!!)
1 cup of sweetener of your choice (we used a combo of honey and maple syrup)
1 cup of chopped walnuts
1 cup of other mix ins (we used sliced almonds, coconut flakes, and sunflower seeds)
1/2 cup of mini chocolate chips
Mix everything together and spread onto a lined baking sheet. Bake at 300 for 10 minutes and then stir. Continue baking until your oats are browned. Ovens vary- our was done in 20-25 minutes.
