Autumn is the season of quince, a wonderful fruit that we love very much. We prepare many different dishes with it. Baked quince as a side dish, quince jam... and so much more.
In this video, we used quince to make a filling for a turkey roll. We took two large turkey legs weighing almost 2.5 kg, removed the bones, and made a roll from the resulting fillet. By the way, the bones and scraps made a delicious broth! So, definitely don’t throw them away.
Ingredients for the quince filling:
quince - 2 pcs. (720 g)
onion - 1 pc. (340 g)
dried apricots - 100 g
turmeric - 1 tsp
salt, black pepper, cayenne pepper to taste.
If you end up with too much filling, don’t be upset. It makes an excellent sweet and sour sauce for any meat dish.
