This year I didn’t buy tomato juice so I substituted beef stock. I mix the beef stock with the onions and cook them, mix this with a fresh tomato sauce. The brown sauce I follow your recipe and addginger, cinnamon, nutmeg, mace and clove buds as well as Tabasco and apple cider vinegar and lots of brown sugar and molasses.
Some things I have learned. The sauce has to be thin enough to fill the spaces between the beans. My sauce was a little coarse because of the unprocessed tomatos so I alternated between sauce and beans and de bubbling, using thicker sauce first and finishing with the thinner top of the sauce (if that makes sense).
