🛑 Ingredients You’ll Need:

1 cup (240g) full-fat cottage cheese, well-drained
5 large eggs, room temperature
1/4 cup (60ml) olive oil or melted unsalted butter
1 1/4 cup (150g) almond flour
1/4 cup (30g) coconut flour
1/4 cup (30g) psyllium husk powder
1 teaspoon xanthan gum (optional)
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon apple cider vinegar
1 tablespoon sweetener (optional)
1/4 cup (60ml) warm water

🛠️ Step-by-Step Instructions:

Preheat your oven to 350°F (175°C) and grease or line a 9x5-inch loaf pan.
Drain your cottage cheese to remove excess moisture.
Mix your wet ingredients: cottage cheese, eggs, olive oil (or butter), and apple cider vinegar.
Combine dry ingredients: almond flour, coconut flour, psyllium husk powder, xanthan gum, baking powder, and salt.
Gradually mix dry ingredients into wet, stirring to form a thick dough.
Transfer dough into the loaf pan, smoothing the top with a spatula.
Bake for 55-65 minutes or until a toothpick comes out clean. If the top isn’t browning, increase the heat or broil for the last 2-3 minutes.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
