Watch this recipe video, it has my tips to make the perfectly soft dahi bhall/vada.

ZERO OIL SOFT DAHI BHALLA Serves 6 to 8

Ingredients:

FOR THE BHALLA OR VADA
Urad dhuli dal/Black gram skinned – 1 cup
Moong dhuli dal/Green gram skinned – 1 cup
Methi dana/Fenugreek seeds – ¼ tsp

FOR FLAVOURING THE BATTER
Hing/Asafoetida – a large pinch
Black Pepper (freshly cracked) – to taste of ½ tsp
Ginger (grated) – ½ tssp
Coriander stalk (chopped) – ½ tsp
Curry leaves (chopped) – 8 to 10
Salt – mild taste

Curd/Yogurt – as required
Milk (chilled) – as required

SPRINKLE OVER
Black salt – to taste
Cumin powder – to taste
Chaat masala powder – to taste
Red chili powder – to taste
Coriander leaves – garnish

Method:
1. Wash and soak the two dals and methi dana for 3 hours or until completely hydrated.
2. Grind them coarsely into a thick paste. Use minimum amount of water.
3. Put the water for steaming to boil.
4. Take the paste into a large bowl. Beat it in one direction till it becomes light and fluffy.
5. Add in the ingredients FOR FLAVOURING THE BATTER. Mix to combine beating in the same direction.
6. Oil the steaming plate or stand. Alternatively line it with butter paper. Wet your fingers and place small dough balls or Bhalla on the plate. Leave a little gap between them.
7. Steam the dough balls till done. Small sized ones should take 5 to 7 minutes.
8. Beat chilled curd or yogurt till smooth. Add chilled milk a little at a time to thin it down to the desired coating consistency. You could sweeten it with a bit of sugar. Put it in the fridge.
9. In a bowl add in a liter of room temperature water. Season it with a pinch of hing/asafoetida and salt. Mix well and keep ready.
10. Once the dough balls are cooked. Cool slightly. Remove and put them in the flavoured water to soak completely.
11. In a flat plate or dish, arrange the soaked bhall/ vada/dough balls. Pour over the beaten curd to cover the Bhalla/vada.
12. Drizzle with sweet tamarind chutney. SPRINKLE OVER the powdered spices, black salt and coriander leaves. Serve immediately.
