A rice based dish, this Paella-inspired plate normally includes squid, shrimp, octopus and other seafood, as well as a variety of different herbs and spices.

This is a dish that is full of flavour and is served in Cevicherias across the country, and today I will show you step-by-step how to make this delicious dish.

Ingredients:

◼️ 350 gr of mixed seafood
◼️ 1 tablespoon of butter
◼️ 1 tablespoon of garlic paste
◼️ 1 onion
◼️ 500 gr of cooked rice
◼️ 4 tablespoons of aji panca (native chilli pepper)
◼️ 4 tablespoons of aji amarillo (native chilli pepper)
◼️ 1/2 large red pepper
◼️ 1/2 cup of peas
◼️ 1/2 cup of sweetcorn
◼️ 1/2 cup of diced carrot
◼️ 1 cup of fish stock (approximately 230ml)
◼️ 40 gr of parmesan cheese (optional)
◼️ A splash of evaporated milk or double cream
◼️ Chopped coriander to taste
