Mantu (Afghan Dumplings) Recipe
Ingredients
For the Dough:
• 2 cups of flour
• Salt (to taste)
• Water (as needed)
For the Filling:
• 500g (1/2 kg) ground meat (beef or lamb)
• 1 kg onions, chopped
• Salt (to taste)
• 3-4 cloves of garlic, minced
• 1 tsp cumin
• 1/2 cup fresh cilantro, chopped
• Oil (for sautéing)
For the Sauce:
• 1 onion, chopped
• 1 cup of chickpeas (cooked)
• Salt (to taste)
• 2 tbsp tomato paste
• 1 cup Greek yogurt
Instructions
1. Prepare the Dough:
• In a bowl, mix the flour and a pinch of salt. Gradually add water to form a medium-soft dough. Let it rest for 30 minutes.
2. Make the Filling:
• In a pressure cooker, boil the meat until cooked. Once done, grind the meat.
• Sauté the chopped onions in oil with salt, cumin, and minced garlic until golden brown. Add the ground meat and cilantro, mixing well. Set aside.
3. Shape the Dumplings:
• Roll out the dough using a pasta machine until it’s thin enough to hold the filling. Cut into squares.
• Place a spoonful of filling in the center of each square, then fold and pinch the edges to seal.
4. Steam the Dumplings:
• Place the dumplings in a steamer and steam for 20-30 minutes until cooked through.
5. Make the Sauce:
• In a pan, sauté the chopped onion in a little oil until soft. Add the chickpeas, salt, and tomato paste. Cook for a few minutes, then set aside.
6. Serve:
• Layer the cooked dumplings with Greek yogurt to prevent sticking. Top with the chickpea sauce,dried mint and enjoy
