पूरी के साथ खाने वाली हलवाई स्टाइल आलू की सब्ज़ी, Halwai style aloo ki sabzi, Puri bhaji
Ingredients for Potato Curry
Mustard Cooking Oil - 4 Big spoons
Cumin Seeds - 1 tsp
Asafoetida Powder - 1/2 tsp
Green Chilli finely chopped - 1 spoon full
Onion finely chopped - 2 full
Kashmiri Red Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Tomato finely chopped - 2 full
Dried Fenugreek Leaves powder (Methi) - 1 tsp
Dried Mango Powder - 1 tsp
Chole Masala Powder - 1 tsp
Boiled Potato - 4 medium size ( Mashed )
Coriander Leaf 1/2 cup finely chopped
Ingredients for Aloo Sabji Tadka - Tadka is important for Best Taste
Mustard Oil - 2 big spoons
Oinion finely chopped - 1 full ( * Fry onions till they turn brown in colour for best taste.)
Whole Dry Red Kashmiri Chilli - 1
Kashmiri Red Chilli Powder - 1 tsp
Fresh Coriander Leaves finely chopped - 2 spoons
Ingredients for Puri Dough
Whole Wheat Flour - 2 Cups
Carom Seeds / ajwain- 1/2 tsp
Salt - 1/2 tsp
Semolina / Rawa / Sooji / Suji - 1 1/2 tsp
Clarified Butter / Ghee - 2 tsp
Cold Water - around 250 ml
Don't use water or wet cloth on Puri Dough rather just grease it with Ghee and keep aside for 1/2 hr.
Puri Should be fried on Smoking Hot Oil only otherwise they won't Puff.
First roll all puri's together then fry them ( If oil is smoking hot every puri will definitely puff ) It will also save time and gas.

आलू करी के लिए सामग्री -
सरसों खाना पकाने का तेल - 4 बड़े चम्मच
जीरा बीज - 1 चम्मच
हींग - 1/2 छोटा चम्मच
हरी मिर्च - 1 चम्मच फुल्ल
प्याज - 2 बारीक कटा हुआ
कश्मीरी लाल मिर्च पाउडर - 1 छोटा चम्मच
हल्दी पाउडर - 1/2 चम्मच
टमाटर - 2 बारीक कटा हुआ
सूखा मेथी पाउडर (मेथी) - 1 चम्मच
अमचूर - 1 चम्मच
छोले मसाला पाउडर - 1 चम्मच
उबला हुआ आलू - 4 मध्यम आकार
धनिया पत्ता 1/2 कप बारीक कटा हुआ
तड़का के लिए
सरसों का तेल - 2 बड़े चम्मच
1 प्याज़ बारीक कटा हुआ
सूखी लाल कश्मीरी मिर्च - १
कश्मीरी लाल मिर्च पाउडर - 1 छोटा चम्मच
ताजा धनिया पत्तियां - 2 चम्मच
पूड़ी के आटे की सामग्री
पूरे गेहूं का आटा - 2 कप
अजवाइन - 1/2 टीस्पून
नमक - 1/2 छोटा चम्मच
रावा / सूजी - 1 1/2 चम्मच
घी - 2 चम्मच
ठंडा पानी - लगभग 250 मिली
